Last year I had a huge Christmas wish . I remember this day well because I just found out that I was pregnant with Benjamin. I was about 5 weeks pregnant—-and i was terrified. Having just had 3 miscarriages & so much heartbreak I was hoping for the best but prepared for the worst. Don’t get me wrong, I was excited & hopeful but at the same time overcome with fear. Fear that at any moment this could all be taken from me —-again. I did everything i could to take my mind of things & as I got further along things got a little easier. But, I feel like I didn’t take my first real breath until that baby was in my arms.
I know many of you out there can relate & many are going through these very struggles right now. The holidays are my absolute favorite time of year but I realize it can be extra difficult & emotional for those who are having troubles. But keep on charging ahead my friends. My Christmas wish came true . Yours can too. I believe in miracles!!

When your 3 year old decides that the entire family should be superheroes you totally oblige! And by oblige I mean start buying everything I see on Amazon that’s superhero” related. (I must confess, it was more of an “Amazon Prime Halloween” than a “Pinterest Halloween” & I’m TOTALLY cool with that!) I even went to real stores! Like, the ones where you have to get out of your car & go inside & talk to humans…..ON Halloween!!! I ran around like a crazed lunatic making sure we all had our proper accessories! Done!!! Our costumes were complete. We were going to be the best superhero family this side of Krypton!
So, now it’s trick or treat time & we’re all set. (This is it! Don’t get scared now!!) The bat mobile is packed, costumes are on, Grace is totally owning Rite Aid’s finest Batman costume, Superman is secured in his tiny car seat, Spidey is at the wheel & Wonder Woman is feeling prettttty good about life/ like she may have real superpowers when the unthinkable..err…the inevitable happens! Batman is crying! Noooooo!! Grace decides she absolutely must change out of her Batman costume at once! Oh the humanity!!!!! She returns moments later…proud as punch…in a poofy, shiny, PINK mermaid costume. Inside, the theme lover in me was crushed, pulverized, dying a slow death. BUT on the outside Wonder Woman smiled & said ” Wow! That’s awesome!!”. I think this right here is what they call “motherhood”. I had to laugh. Who doesn’t love a PLOT TWIST?!?
So, this is how we became the family of superheroes & a happy little mermaid.
A healthy twist on Taco Tuesday!
Here’s my Turkey Taco Salad with corn, tomato and avocado tossed with chipotle ranch dressing, a drizzle of fresh squeezed lime & a dollop of sour cream. Sautéed the ground turkey with the usual taco seasoning. You can throw this together in no time. SO quick. SO easy. SO good.
What’s more fun than an Easter floral & new patent leather shoes? Being an old soul…I would have wrestled alligators to get Grace in an Easter bonnet BUT wrestling with a 3 year old just to get her out he door to church was all this preggo mama could handle. Here we are admiring each other in our Sunday Best! Soaking up these moments. I love a holiday!
The perfect dessert for both Easter & Passover! All the taste of a delicious lemon meringue pie in bite sized little nibbles. I attempted to shape the Meringue like eggs with the lemon curd as the yolk. Tangy, chewy, sugary goodness. I will definitely be making these again!
Chicken Broccoli Stir Fry in 15 minutes! No joke. (You know I wouldn’t kid about a thing like dinner!!)
Tonight, I wanted to use up what I already had in the fridge. I had some chicken breast & broccoli so I went for that yummy salty, soy saucy flava. Definitely healthier than the chicken & broc from my favorite Chinese place & way quicker than even the fastest delivery in town.
I mostly eyeballed on the one but here’s the basics…
*Sautée chopped garlic in veg oil
*Cut up 2-3 chx breast in smallish pieces & add to hot oil
*Add in broccoli. Cook a couple of minutes until tender. ( then add mushroom if you have it!)
*In another bowl mix 3-4 tbsp soy sauce, 1 tsp rice vinegar, 1 tbsp honey & 1 tbsp sesame oil.
*Add mixture to chicken & broccoli & toss so everything is nicely coated. Turn heat to low & let brown sauce thicken a bit.
*Add in spaghetti, soba noodles, brown rice- whatever you’ve got!
FRESH FLORAL ICE CUBES
It’s Valentine’s Day! Time to step it up! It’s those sweet little touches that can make the day extra special!
A great way to add a romantic touch to your champagne bucket. Impress your guests at a party or for a Valentine’s dinner for 2!
Use a muffin tin for your floral cubes. It’s something you probably already have in your cabinet & it makes the cubes more substantial. This is the time to show off!
Place flower buds, petals, greenery…whatever you have in the tin. There are no rules! Cover with water and freeze.
Don’t worry if the water doesn’t cover the flower or it floats. It actually looks cooler if the bud is popping out of the cube.
Let cubes sit at room temp for a few minutes so you can flip over tin and they’ll pop right out!
If you don’t have a fancy pants wine bin ( I don’t ) you can just use a big clear bowl. It actually displays your ice cubes better.
Plop in your wine/champagne and admire your fabulousness!
