10 Minute Spaghetti Carbonara

This is a classic recipe for an authentic Italian comfort food that is tried and true. No butter, no cream, no garlic. Just a few simple yet quality ingredients. By the time the pasta is done boiling – this dish is complete!

1/2 lb Thick Spaghetti

4oz Guanciale (the cheek of the pork) or pancetta (Italian bacon) or thick cut bacon (ONLY as a last resort) cut into small cubes.

2 tbsp olive oil

2 eggs

1/4 cup Quality Parmesan cheese (or pecorino) freshly grated.

Fresh black pepper

Cook the pasta boiling salted water until al dente.

Meanwhile, heat the oil in a pan and fry pancetta until nice and crispy. Remove from heat.

In a bowl, lightly beat the eggs with 1/4 cup grated cheese and fresh ground pepper.

When pasta is ready, remove it it directly from boiling water with tongs and add to the pan with the pancetta. Then mix well to coat.

Then immediately add the egg and cheese mixture.

Coat the pasta completely with the sauce and serve right away.

Top with lots of additional cheese and pepper. (Salt to taste if necessary)
