COOKING LIVE: Pasta w/ Broccoli Rabe & Italian Sausage

This is one of my favorite dishes! I never pass it up on a menu but truth be told – the one I make it home is kinda aaamazing. If I can make it LIVE, in less than 30 min, with a houseful of hungry people in my ear…you can do it too! Trust! (Thanks for tuning in by the way! ) As promised, here’s the recipe!

PASTA w/ HOT ITALIAN SAUSAGE & BROCCOLI RABE

• 1 lb pasta (your choice) • 1 cup chicken stock • 3 tbsp Extra Virgin Olive Oil • 1 pound Italian Sausage (casing removed) • 2 cloves of garlic ( minced) • 1 bunch Broccoli Rabe (chopped) • 1 cup Parmesan Cheese (freshly grated) • Salt and Pepper • Butter (optional)

Bring a large pot of salted water to a boil. Cook pasta about 1 minute short of the package instructions and drain. (You’ll be cooking it a bit more later)

Heat a sauté pan with (3 tablespoons) of extra virgin olive oil. Add the sausage, break it up & cook, until browned (about 8 minutes.) Add minced garlic & cook for about 1 minute. Careful not to burn! Add the broccoli rabe to the pan, season with salt and pepper & toss to coat in the pan drippings.

Toss in chicken stock & Sauté about 3 minutes or until tender making sure to scrape up brown bits from the pan.

Add the pasta and toss to coat. Cook for 1 more minute. (Optional: Add a pat or 2 of butter if you’re feeling wild!)
