Old Fashioned Mashed Potatoes
OLD FASHIONED MASHED POTATOES
( Serves 4-6 )

2 pounds Yukon gold potatoes, peeled and cut into 2 inch pieces
3 tablespoons butter, room temperature
¾ cup milk or half and half
2 teaspoons salt
1 tablespoon chives, chopped
In a large pot, add potatoes and cover with cold water and 1 teaspoon of salt. Cover and cook over high heat
until potatoes are tender. Drain water and transfer potatoes in a mixing bowl.
Mash potatoes until light and fluffy. Fold in butter, milk and salt. Top with chives and
season with salt and pepper, to taste.
